Like many during this time of year health and fitness are a main priority. Overall health starts in the kitchen and then adding some consistent fitness in the schedule. I am incorporating more healthy eating habits into my weekly routine. This week I’m going plant based and I found a delicious recipe from food blog a Virtual Vegan. This one pot meal is very hearty and a perfect winter weeknight dinner. Traditionally pot roast is made by searing meat and then adding it to a pot with broth, vegetables and herbs. This vegan portobello pot roast is made very similarly by searing portobello mushrooms and placing it with broth, vegetables, white wine and herbs into a pot for roasting.
